Ingredients:
Fresh or frozen okra (sliced)
Sliced potatoes and onions
Vegetable oil
Cumin seeds, salt, cumin and coriander powder, turmeric powder and chili powder
Preparations:
Heat a large pan with 3-4 tbsp of vegetable oil over medium-high heat. Once the oil is hot, add 1 tsp of cumin seeds along with the sliced okra. Sautee the okra in the oil until all the stickiness is gone (about 12-15 min). Then add the sliced onions and potatoes. Cover the pan to cook the potatoes. Cook for 5 minutes covered. Then add salt to taste, 1 tbsp of cumin and coriander powder, 1 tsp of turmeric powder and 1 tsp of chili powder. Sautee for another 5 minutes and check to make sure the potatoes are cooked through. Serve with a side of plain yogurt. Enjoy this easy to make healthy, okra dish with white rice, tortillas or chappati and you will have your self a new favorite. Enjoy!!!

10 Easy GAS-SAVING Tips
1. Maintian proper tire pressure. Do not over inflate or under inflate.
2. Keep a clean air filter (easy to change yourself even).
3. Fix check engine light problems. (click) You can get a free reading at Autozone for 1996 and newer cars.
4. DO NOT miss regular maintenance like tune-up or oil change.
5. Remove all unessary weight from your car/trunk. Less weight=More mpg.
6. When heading towards a red light or stop sign DO NOT accelerate. Take your foot off of the gas and just coast to the red light.
7. Turn off the car when stopped for 2 minutes or more like if you are waiting for your friend to come down.
8. Combine all of your trips into one long trip and in cold weather go to the farthest destination first so your engine is warm and efficient.
9. Roll up your windows and use airconditioning on the highway to reduce drag.
10. Most importantly follow the above rules they are really quite EASY and dont get SUCKERED into buying those cheap gimmicky gadgets that promise an increase in fuel efficiency.
*Out of all of these the three that I swear by are turning the engine off whenever possible, getting rid of all junk from my car, and most of all trying to drive without breaking. This may sound nuts but trying to do that will change the way you drive. You will stop being heavy on the gas and breaking hard (which will also make your brakes last longer). I now try to time all the lights with my speed so that I don't have to stop at a red light and get the green lights. Within a week I noticed a 20% increase in my gas mileage from 20mpg to 24mpg.
